From a Honduran kitchen in Boise to a schnitzel spot and a cocktail bar, a new roundup spotlights 15 local restaurants and cafés opening this year across the metro.
The Treasure Valley’s dining scene is getting a notable refresh in 2025, and a new TikTok roundup from @hellomeridian compiles fifteen spots worth keeping an eye on across Boise, Meridian, Eagle, and beyond.
The list pulls in a wide range of concepts: La Catracha brings Honduran flavors to Boise, Schnitzel Fritz offers a Central European angle, and Can Coctelería adds a dedicated cocktail bar to the mix. On the comfort side, Spoonful Ice Cream, Sourdough and Sage in Eagle, and Max and Louie’s Café are among the spots drawing early attention. El Gaucho, the upscale Seattle-born steakhouse chain, also makes the list alongside Vessel Kitchen, a Utah-rooted fast-casual favorite that already has fans here before it opens.
Other names on the roundup include Sidequest Boise, Spud Daddy, The Boise Post, Siren Song Winemaker’s Loft, The Sportsman Meridian, Boran Coffee Lounge, and Coa Cantina. @hellomeridian notes more spots are still to come.
For a metro that has spent years watching its restaurant scene quietly catch up to its growth, fifteen new openings in a single calendar year is not nothing.
